Calling all fresh pasta lovers! Le Gros Nez, a fresh-pasta company owned and operated by the chef and food enthusiast Daniel Noble, has officially opened its doors in downtown Sutton.

Noble has a lot on his plate. When he is not busy preparing his pasta by hand, he is cooking and tasting his specialty sauces, or delivering his food to numerous points of sale in Sutton, such as Chez Matis.

Noble also sells products made by L’Archipel, a Cowansville-based restaurant that caters to vegans, vegetarians, and health-inclined consumers. Among other items, you can feast on mulligatawny (the delicious curry soup), artisanal relishes, and home-made salsa.

Noble is a self-taught chef who likes the odd challenge thrown his way. A barman for years, he quickly learnt the ropes while working in a restaurant and became second in line in seniority as chef within a matter of months. At the age of 17, he was already perfecting his art. He slowly but surely experimented with pasta at the back of Round Top Bagels.

Local Ingredients

Noble insists upon using local products and ingredients as much as possible. “It can be tough, especially during our winters. But I do my best to get my meat from local establishments such as Patch Farm and Cheeky Creek Farm. I also use local flour, tomatoes, and garlic in my products.” Noble hopes to open up a fridge in his newly renovated space, where he will sell a variety of frozen meats from Patch Farm. “I want people to be able to do most of their grocery shopping in one go,” he explained.

With his business partner Ryan Carter always ready to give a hand, Noble has numerous ambitious projects. For instance, he recently started serving Italian-style sandwiches. Think marinated vegetables and cold cuts served on ciabatta. And you have a good idea of the delicious lunches he will be able to provide tourists and locals alike.

Originally from Ontario, Noble resided in Montreal for over ten years before moving to Sutton, a place he has come to cherish for its fun lifestyle options. With a laid-back attitude and an open smile, Noble, who has an obvious fondness for blues, is a pro at greeting customers and he loves telling them about his dishes and products.
